Meet Maria

Maria is a Holistic Chef and the founder of NooriBite. She trained in culinary nutrition and functional cooking with CNM London. Her own health journey taught her how deeply food shapes the way we feel, move, and live.

Today, she leads a small kitchen in New Covent Garden Market where every NooriBite meal is prepared by hand, in small batches, from real ingredients.

Why I started NooriBite

A few years ago, I faced a health diagnosis that changed everything. At that moment, I had a choice about how I would care for myself.

I chose to put food at the centre of my daily life. Not as a cure, not as a promise, but as a daily act of self-respect. Whole, seasonal, real ingredients. Meals cooked with attention. Flavours that felt generous, not restrictive.

That choice changed me. It sent me back to the kitchen with different eyes, and eventually into proper training as a Holistic Chef, where I studied how ingredients affect energy, digestion, hormones, and recovery. I wanted to understand, not to promise anything to anyone, but because it mattered to me to know.

NooriBite is the food I cook for myself, now made available to others. It’s thoughtful, not restrictive. Most dishes are naturally gluten-free, dairy-free, and refined-sugar-free, but some include ancient grains, sourdough, or a small amount of quality cheese where the ingredient genuinely belongs. I always offer a version without, so you can eat the way that feels right for you.

Every meal is seasonal and prepared in small batches at our kitchen in New Covent Garden Market.
